Ingredients
- 8 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup whipped topping
- 1 ½ cups graham cracker crumbs
- ½ cup butter, melted
- 1 cup chocolate eggs, for decoration
- Fresh fruit toppings (strawberries, blueberries, etc.)
Instructions
- Prepare the crust: Crush graham crackers in a zip-top bag or food processor until fine crumbs form. In a medium bowl, mix the crumbs with melted butter until the mixture resembles wet sand. Press this mixture into the bottom of a 9-inch springform pan firmly, ensuring it’s even. Chill while you prepare the filling.
- Make the filling: In a large mixing bowl, beat softened cream cheese until smooth. Gradually add sugar, mixing well until fully combined and creamy. Gently fold in the whipped topping until fully incorporated. Optionally, add a splash of vanilla extract or lemon zest for flavor.
- Assemble: Pour the cheesecake mixture into the chilled crust, spreading it evenly. Tap the pan lightly on the counter to remove any air bubbles. Cover with plastic wrap and refrigerate for at least 240 minutes; overnight is even better.
- Decorate: Once set, decorate the top with mini chocolate eggs and fresh fruits. Whipped cream swirls or colorful sprinkles can add that holiday cheer.
- Serve: Run a knife along the edges of the springform pan before releasing it. Cut into slices and serve.
Notes
Make sure your cream cheese is softened for easy mixing. Use a spatula to avoid overmixing for a light texture. Get creative with toppings!
