Ingredients
- 2 cups chocolate cookies, crushed
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sour cream
- 1 cup granulated sugar
- 1/2 cup cocoa powder
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup cherries (fresh or frozen)
- Chocolate shavings, for garnish
Instructions
- Prepare the crust: Crush the chocolate cookies in a food processor until fine. Mix with melted butter and press into a springform pan. Bake at 350°F (175°C) for 8-10 minutes.
- Make the cheesecake filling: Beat cream cheese until smooth, add sugar and cocoa, then mix in sour cream and vanilla. Finally, add eggs one at a time.
- Assemble the cheesecake: Pour half the mixture over the crust, add cherries, then pour the remaining batter over the cherries.
- Bake in the oven for 50-60 minutes. Allow to cool in the oven for 1 hour.
- Chill in the refrigerator for at least 4 hours, preferably overnight, then top with cherries and chocolate shavings before serving.
