Ingredients

  • 2 cups chocolate cookies, crushed
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup cherries (fresh or frozen)
  • Chocolate shavings, for garnish

Instructions

  1. Prepare the crust: Crush the chocolate cookies in a food processor until fine. Mix with melted butter and press into a springform pan. Bake at 350°F (175°C) for 8-10 minutes.
  2. Make the cheesecake filling: Beat cream cheese until smooth, add sugar and cocoa, then mix in sour cream and vanilla. Finally, add eggs one at a time.
  3. Assemble the cheesecake: Pour half the mixture over the crust, add cherries, then pour the remaining batter over the cherries.
  4. Bake in the oven for 50-60 minutes. Allow to cool in the oven for 1 hour.
  5. Chill in the refrigerator for at least 4 hours, preferably overnight, then top with cherries and chocolate shavings before serving.
