Ingredients
- 1 lb boneless chicken breast or thighs
- 1 cup heavy cream or light alternative
- 2 cloves fresh garlic, minced
- 1 onion, diced
- 1 bell pepper, diced
- 1 jalapeño, diced (optional)
- 1 cup chicken or vegetable broth
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp chili powder
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1 tbsp olive oil
Instructions
- Cook the chicken: Begin by heating olive oil in a skillet over medium-high heat. Add sliced chicken, season with salt and pepper, and cook until golden brown, about 6-7 minutes.
- Add aromatics and peppers: Toss in diced onions, garlic, and bell peppers. Sauté for about 4-5 minutes.
- Incorporate spices: Sprinkle in paprika, cumin, and chili powder, stirring to combine.
- Pour in the cream and broth: Reduce heat to medium-low, pour in cream and broth, and allow to simmer for 5-7 minutes until thickened.
- Finish with fresh herbs and lime: Remove from heat, squeeze lime juice and add cilantro.
- Serve and enjoy: Serve over rice, with tortillas, or in bowls, garnished with extra cilantro and lime.
