Ingredients
- 12 oz fettuccine or penne pasta
- 10 oz Andouille or Italian sausage, sliced
- 1 cup heavy cream
- 1 cup chicken broth
- 4 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tablespoons Cajun seasoning
- 1/2 cup Parmesan cheese, grated
- Fresh parsley or green onions, chopped (for garnish)
Instructions
- Cook the pasta: In a large pot of boiling salted water, cook your choice of pasta according to package instructions. Drain and set aside, reserving about a cup of the pasta water.
- Brown the sausage: In a large skillet over medium heat, add a splash of olive oil. Once hot, add the sliced sausage and let it brown for a few minutes.
- Sauté the veggies: Toss in diced bell peppers and minced garlic. Cook until the peppers are tender, about 3-4 minutes.
- Make the sauce: Pour in the heavy cream and chicken broth, stirring until combined. Add Cajun seasoning to taste, and let it simmer for about 5 minutes until the sauce thickens slightly.
- Combine pasta and sauce: Add the cooked pasta to the skillet and stir to coat. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.
- Finish with cheese & herbs: Stir in grated Parmesan cheese until melted and creamy. Top with freshly chopped parsley or green onions for some color.
- Serve and enjoy! Plate it up hot.
Notes
For a lighter version, use turkey sausage and half-and-half instead of heavy cream. Pair with garlic bread and green salad.
