Ingredients

  • 12 oz fettuccine or penne pasta
  • 10 oz Andouille or Italian sausage, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tablespoons Cajun seasoning
  • 1/2 cup Parmesan cheese, grated
  • Fresh parsley or green onions, chopped (for garnish)

Instructions

  1. Cook the pasta: In a large pot of boiling salted water, cook your choice of pasta according to package instructions. Drain and set aside, reserving about a cup of the pasta water.
  2. Brown the sausage: In a large skillet over medium heat, add a splash of olive oil. Once hot, add the sliced sausage and let it brown for a few minutes.
  3. Sauté the veggies: Toss in diced bell peppers and minced garlic. Cook until the peppers are tender, about 3-4 minutes.
  4. Make the sauce: Pour in the heavy cream and chicken broth, stirring until combined. Add Cajun seasoning to taste, and let it simmer for about 5 minutes until the sauce thickens slightly.
  5. Combine pasta and sauce: Add the cooked pasta to the skillet and stir to coat. If the sauce is too thick, add some reserved pasta water until you reach your desired consistency.
  6. Finish with cheese & herbs: Stir in grated Parmesan cheese until melted and creamy. Top with freshly chopped parsley or green onions for some color.

Notes

For a lighter version, use turkey sausage and half-and-half instead of heavy cream. Pair with garlic bread and green salad.
