A flavorful dish that combines sweet honey and smoky chipotle for a deliciously satisfying meal.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 2 pounds boneless chicken (breast or thighs)
  • 1/2 cup honey
  • 2-3 chipotle peppers in adobo sauce, minced
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil

Instructions

  1. Marinate the chicken by whisking together honey, chipotle peppers, garlic, soy sauce, and lime juice in a bowl. Toss the chicken to coat and let marinate for at least 30 minutes.
  2. Heat olive oil in a skillet over medium heat until shimmering.
  3. Cook the chicken for about 6-7 minutes on each side, or until it reaches an internal temperature of 165°F, allowing it to caramelize slightly.
  4. Pour the remaining marinade into the skillet and let it simmer until thickened and coats the chicken.
  5. Remove the chicken from heat and let it rest for a few minutes before slicing.
  6. Serve over rice or alongside grilled veggies, garnished with a squeeze of lime.

Notes

Marinate the chicken for several hours for enhanced flavor. Don’t rush the cooking process for best results.
