Ingredients
- 2 pounds boneless chicken (breast or thighs)
- 1/2 cup honey
- 2-3 chipotle peppers in adobo sauce, minced
- 4 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons lime juice
- 2 tablespoons olive oil
Instructions
- Marinate the chicken by whisking together honey, chipotle peppers, garlic, soy sauce, and lime juice in a bowl. Toss the chicken to coat and let marinate for at least 30 minutes.
- Heat olive oil in a skillet over medium heat until shimmering.
- Cook the chicken for about 6-7 minutes on each side, or until it reaches an internal temperature of 165°F, allowing it to caramelize slightly.
- Pour the remaining marinade into the skillet and let it simmer until thickened and coats the chicken.
- Remove the chicken from heat and let it rest for a few minutes before slicing.
- Serve over rice or alongside grilled veggies, garnished with a squeeze of lime.
Notes
Marinate the chicken for several hours for enhanced flavor. Don’t rush the cooking process for best results.
