Ingredients
- 2 pounds Yukon Gold potatoes
- 1 packet ranch seasoning
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 tablespoons butter or olive oil
- 2 cloves garlic, minced
- Fresh herbs (chives, parsley, or dill)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the potatoes by washing and dicing them into bite-sized pieces.
- Parboil the potatoes in boiling salted water for about 5-7 minutes until slightly tender.
- Create the ranch mixture by mixing ranch seasoning, garlic, and melted butter or oil in a bowl.
- Combine the parboiled potatoes with the ranch mixture until evenly coated.
- Add half of the cheese and transfer the mixture to a greased baking dish, then sprinkle the remaining cheese on top.
- Bake for 25-30 minutes or until the top is bubbly and golden brown.
- Garnish with fresh herbs and serve.
Notes
For a dairy-free version, substitute with vegan cheese and plant-based butter. Fresh herbs can be replaced with dried, but use sparingly.
