Deliciously easy Cheesy Ranch Potatoes that are perfect for gatherings and family meals, blending creamy ranch seasoning with gooey cheese and tender potatoes.

Ingredients

  • 2 pounds Yukon Gold potatoes
  • 1 packet ranch seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 tablespoons butter or olive oil
  • 2 cloves garlic, minced
  • Fresh herbs (chives, parsley, or dill)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the potatoes by washing and dicing them into bite-sized pieces.
  3. Parboil the potatoes in boiling salted water for about 5-7 minutes until slightly tender.
  4. Create the ranch mixture by mixing ranch seasoning, garlic, and melted butter or oil in a bowl.
  5. Combine the parboiled potatoes with the ranch mixture until evenly coated.
  6. Add half of the cheese and transfer the mixture to a greased baking dish, then sprinkle the remaining cheese on top.
  7. Bake for 25-30 minutes or until the top is bubbly and golden brown.
  8. Garnish with fresh herbs and serve.

Notes

For a dairy-free version, substitute with vegan cheese and plant-based butter. Fresh herbs can be replaced with dried, but use sparingly.
