Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 ripe tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, sliced
  • 1 cup mozzarella cheese, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the chicken dry and season generously with salt and pepper.
  2. Combine diced tomatoes, minced garlic, sliced basil, olive oil, and balsamic vinegar in a bowl. Toss gently.
  3. Arrange seasoned chicken in an oven-safe skillet and spoon the bruschetta mixture on top. Add mozzarella slices over everything.
  4. Transfer the skillet to the oven and bake for 25-30 minutes until the chicken is cooked through and cheese is bubbly.
