Ingredients
- 4 boneless, skinless chicken breasts
- 2 ripe tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup fresh basil, sliced
- 1 cup mozzarella cheese, sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C). Pat the chicken dry and season generously with salt and pepper.
- Combine diced tomatoes, minced garlic, sliced basil, olive oil, and balsamic vinegar in a bowl. Toss gently.
- Arrange seasoned chicken in an oven-safe skillet and spoon the bruschetta mixture on top. Add mozzarella slices over everything.
- Transfer the skillet to the oven and bake for 25-30 minutes until the chicken is cooked through and cheese is bubbly.
- Serve hot, garnished with fresh basil, and enjoy with crusty bread or salad.
Notes
Always let the chicken rest for a few minutes before serving to keep the juices locked in.
