Ingredients

  • 2 cups fresh carrots, grated
  • 2 cups crisp apples, diced (Fuji, Honeycrisp, or Braeburn)
  • 1 cup rolled oats
  • 1/2 cup nut butter (almond or peanut)
  • 1/4 cup maple syrup or honey
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash and peel the fresh carrots, then grate them.
  3. Core and dice the apples into small pieces.
  4. Combine the grated carrots and diced apples in a large mixing bowl.
  5. Add the rolled oats, nut butter, maple syrup or honey, and spices. Stir well.
  6. Form small round balls or patties with a tablespoon of the mixture.
  7. Place them onto a baking tray lined with parchment paper.
  8. Bake for about 15-20 minutes, until golden brown and crunchy.
