Ingredients
- 2 cups fresh carrots, grated
- 2 cups crisp apples, diced (Fuji, Honeycrisp, or Braeburn)
- 1 cup rolled oats
- 1/2 cup nut butter (almond or peanut)
- 1/4 cup maple syrup or honey
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
Instructions
- Preheat your oven to 350°F (175°C).
- Wash and peel the fresh carrots, then grate them.
- Core and dice the apples into small pieces.
- Combine the grated carrots and diced apples in a large mixing bowl.
- Add the rolled oats, nut butter, maple syrup or honey, and spices. Stir well.
- Form small round balls or patties with a tablespoon of the mixture.
- Place them onto a baking tray lined with parchment paper.
- Bake for about 15-20 minutes, until golden brown and crunchy.
- Cool for a few minutes before enjoying.
Notes
Pat the grated carrots dry before mixing to prevent sogginess. Flip the crunchies halfway through baking for even crispiness.
