Ingredients
- 1 lb ground beef or turkey (or lentils for a vegetarian option)
- 2 cans (15 oz each) kidney beans, rinsed
- 2 cans (15 oz each) black beans, rinsed
- 2 cans (15 oz each) diced or crushed tomatoes
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 2 tbsp chili powder
- 1 tsp cumin
- 4 cups beef or vegetable broth
- Olive oil for cooking
Instructions
- Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add diced onion and bell peppers, cooking until softened. Toss in minced garlic for the last minute.
- Brown the Meat: If using ground beef or turkey, push the vegetables to the side and add the meat. Cook until browned, breaking it apart as it cooks for an even texture.
- Add the Spices: Sprinkle in chili powder and cumin, stirring to coat the meat in those warm, fragrant spices.
- Incorporate Tomatoes and Beans: Stir in the diced or crushed tomatoes and rinse canned beans before adding them in. Let the mixture simmer gently.
- Pour in Broth: Add enough broth to reach your desired consistency and allow the flavors to meld together. Simmer for at least 30 minutes, up to two hours for more intensity.
- Taste and Adjust: Near the end of cooking, taste for salt, pepper, and extra chili powder if desired.
- Finish with Fresh Herbs (optional): Just before serving, stir in freshly chopped cilantro, parsley, or green onions.
Notes
Chili can be served on its own or paired with cornbread or tortilla chips. It freezes beautifully for future meals.
