Ingredients
- 1 cup active sourdough starter
- 1 ½ cups warm water
- ¼ cup honey
- 4 cups bread flour
- 1 cup rolled oats
- 1 ½ teaspoons salt
Instructions
- Mix the sourdough starter, warm water, and honey in a large bowl until smooth. Gradually add bread flour and rolled oats until a shaggy dough forms.
- Autolyse the dough for 30 minutes to allow flour to absorb water.
- Knead the dough for about 10 minutes until elastic, incorporating salt during this process.
- Place the dough in a lightly oiled bowl, cover, and let rise at room temperature for 4 to 6 hours until doubled in size.
- Shape the risen dough into a loaf on a floured surface.
- Transfer the shaped dough to a proofing basket, cover, and let rise for 1 to 2 hours.
- Preheat the oven to 450°F (232°C) with a Dutch oven inside to heat.
- Bake the dough covered for 30 minutes, then uncovered for another 15 minutes until golden brown.
- Cool the bread on a wire rack before slicing.
Notes
Letting the bread cool completely will enhance its flavor. Best enjoyed fresh.
