A delightful homemade sourdough bread with the rich flavor of oats, sweetness from honey, and a perfect chewy texture.

Ingredients

  • 1 cup active sourdough starter
  • 1 ½ cups warm water
  • ¼ cup honey
  • 4 cups bread flour
  • 1 cup rolled oats
  • 1 ½ teaspoons salt

Instructions

  1. Mix the sourdough starter, warm water, and honey in a large bowl until smooth. Gradually add bread flour and rolled oats until a shaggy dough forms.
  2. Autolyse the dough for 30 minutes to allow flour to absorb water.
  3. Knead the dough for about 10 minutes until elastic, incorporating salt during this process.
  4. Place the dough in a lightly oiled bowl, cover, and let rise at room temperature for 4 to 6 hours until doubled in size.
  5. Shape the risen dough into a loaf on a floured surface.
  6. Transfer the shaped dough to a proofing basket, cover, and let rise for 1 to 2 hours.
  7. Preheat the oven to 450°F (232°C) with a Dutch oven inside to heat.
  8. Bake the dough covered for 30 minutes, then uncovered for another 15 minutes until golden brown.
  9. Cool the bread on a wire rack before slicing.

Notes

Letting the bread cool completely will enhance its flavor. Best enjoyed fresh.
