- 2 cups Cake Flour
- 1 cup Granulated Sugar
- 1 tsp Baking Powder
- 1/4 tsp Salt
- 1/2 cup Unsalted Butter, softened
- 2 Eggs

- 1/2 cup Heavy Cream
- 1/2 cup Powdered Sugar (for filling)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream the butter and sugar together in a large bowl until fluffy.
- Beat in the eggs and vanilla until fully incorporated.
- Whisk together the cake flour, baking powder, and salt in a separate bowl.
- Gradually add the dry mixture into the wet ingredients, mixing until just combined.
- Scoop tablespoons of dough onto lined baking sheets.
- Bake for about 10-12 minutes, or until the edges are lightly golden.
- Beat together the heavy cream with powdered sugar until thick.
- Sandwich a dollop of filling between two cooled cookies.
