Ingredients

  • 12 fresh diver scallops
  • 2 finger limes
  • 2 tablespoons extra virgin olive oil

Instructions

  1. Prepare the scallops: Rinse under cold water, pat dry, and remove any tough muscle fragments.
  2. Slicing: Using a sharp knife, slice the scallops into thin rounds, about 1/4 inch thick.
  3. Marinade: In a mixing bowl, drizzle the scallops with olive oil and season with sea salt and black pepper. Gently toss to coat.
  4. Finger lime magic: Cut the finger limes in half and gently squeeze out the caviar-like pearls into the bowl with the scallops.
  5. Herbs: Fold in coarsely chopped fresh herbs.
  6. Plate and serve: Arrange the crudo on a chilled plate, garnishing with more finger lime pearls and a drizzle of olive oil.

Notes
