Ingredients
- 12 fresh diver scallops
- 2 finger limes
- 2 tablespoons extra virgin olive oil
- Sea salt, to taste
- Black pepper, to taste
- Fresh cilantro or microgreens
Instructions
- Prepare the scallops: Rinse under cold water, pat dry, and remove any tough muscle fragments.
- Slicing: Using a sharp knife, slice the scallops into thin rounds, about 1/4 inch thick.
- Marinade: In a mixing bowl, drizzle the scallops with olive oil and season with sea salt and black pepper. Gently toss to coat.
- Finger lime magic: Cut the finger limes in half and gently squeeze out the caviar-like pearls into the bowl with the scallops.
- Herbs: Fold in coarsely chopped fresh herbs.
- Plate and serve: Arrange the crudo on a chilled plate, garnishing with more finger lime pearls and a drizzle of olive oil.
Notes
Try sprinkling some pink sea salt on top before serving for added flavor.
