Ingredients
- 1 cup pecan halves (or walnuts, almonds, or a mix)
- 1 cup granulated white sugar
- 1/2 cup unsalted butter
- 1/2 cup corn syrup (dark corn syrup optional)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Prepare your baking sheet; line it with parchment paper.
- Melt the butter in a medium saucepan over medium heat.
- Add the sugar, corn syrup, and salt, and stir until it starts to boil.
- Cook for about 3–5 minutes without stirring until it reaches a deep golden hue.
- Remove from heat and carefully stir in the nuts and vanilla.
- Quickly pour the mixture onto the prepared baking sheet, spreading it out evenly.
- Allow to cool completely, preferably several hours or overnight, until hard. Once set, break into pieces.
Notes
Roast nuts lightly before adding for enhanced flavor. Use a candy thermometer for precise caramelization.
