Ingredients

  • 1 cup Sourdough Discard
  • 2 cups All-Purpose Flour (or whole wheat/spelt for substitutions)
  • 3/4 cup Brown Sugar (or coconut sugar)
  • 2 Eggs (or flax eggs for vegan)
  • 1/2 cup Unsalted Butter (or coconut oil)
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 2 tsp Cinnamon
  • 1 tsp Vanilla Extract (or almond extract)
  • 1/2 tsp Salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the sourdough discard, melted butter, sugar, and eggs in a bowl until blended.
  3. Mix the flour, cinnamon, baking powder, baking soda, and salt in another bowl.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Pour the batter into the loaf pan and smooth the top.
  6. Bake for 45-50 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Best served warm with butter or honey. This quick bread freezes beautifully; slice and freeze with parchment between slices.
