Ingredients
- 1 cup Sourdough Discard
- 2 cups All-Purpose Flour (or whole wheat/spelt for substitutions)
- 3/4 cup Brown Sugar (or coconut sugar)
- 2 Eggs (or flax eggs for vegan)
- 1/2 cup Unsalted Butter (or coconut oil)
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 2 tsp Cinnamon
- 1 tsp Vanilla Extract (or almond extract)
- 1/2 tsp Salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- Combine the sourdough discard, melted butter, sugar, and eggs in a bowl until blended.
- Mix the flour, cinnamon, baking powder, baking soda, and salt in another bowl.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the loaf pan and smooth the top.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Best served warm with butter or honey. This quick bread freezes beautifully; slice and freeze with parchment between slices.
