Ingredients

  • 2 Delicata Squash, sliced into half-moon shapes
  • 3 tablespoons Pomegranate Molasses
  • 2 tablespoons Olive Oil

  • Salt and Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the delicata squash in half lengthwise and scoop out the seeds. Slice into half-moon shapes, about ½ inch thick.
  3. Combine pomegranate molasses, olive oil, minced garlic, salt, pepper, and fresh herbs in a large bowl.
  4. Toss the sliced squash in the mixture until evenly coated.
  5. Transfer the squash slices onto a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 25-30 minutes, turning halfway through.
  7. Add an extra drizzle of pomegranate molasses before serving.
