- 2 Delicata Squash, sliced into half-moon shapes
- 3 tablespoons Pomegranate Molasses
- 2 tablespoons Olive Oil
- 2 cloves Garlic, minced
- Fresh Thyme or Rosemary, to taste

Instructions
- Preheat your oven to 400°F (200°C).
- Cut the delicata squash in half lengthwise and scoop out the seeds. Slice into half-moon shapes, about ½ inch thick.
- Combine pomegranate molasses, olive oil, minced garlic, salt, pepper, and fresh herbs in a large bowl.
- Toss the sliced squash in the mixture until evenly coated.
- Transfer the squash slices onto a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, turning halfway through.
- Add an extra drizzle of pomegranate molasses before serving.
- Enjoy warm as a side dish or in a salad.
