Ingredients

  • 2 lbs winter squash (butternut, acorn, or delicata)
  • 1/4 cup pure maple syrup
  • 2 tablespoons miso paste (white preferred)
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • Fresh herbs (thyme or rosemary) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the squash by peeling (if necessary), seeding, and cutting into bite-sized cubes.
  3. Make the glaze by whisking together maple syrup, miso paste, olive oil, and minced garlic in a small bowl.
  4. Toss the squash cubes with the glaze in a large bowl until evenly coated.
  5. Spread the squash out in a single layer on a parchment-lined baking sheet.
  6. Roast for 25-30 minutes, tossing halfway through, until tender and caramelized.
  7. Add fresh herbs during the last 5-10 minutes of roasting for added flavor.
