Ingredients
- 2 lbs winter squash (butternut, acorn, or delicata)
- 1/4 cup pure maple syrup
- 2 tablespoons miso paste (white preferred)
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic, minced
- Fresh herbs (thyme or rosemary) for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the squash by peeling (if necessary), seeding, and cutting into bite-sized cubes.
- Make the glaze by whisking together maple syrup, miso paste, olive oil, and minced garlic in a small bowl.
- Toss the squash cubes with the glaze in a large bowl until evenly coated.
- Spread the squash out in a single layer on a parchment-lined baking sheet.
- Roast for 25-30 minutes, tossing halfway through, until tender and caramelized.
- Add fresh herbs during the last 5-10 minutes of roasting for added flavor.
- Serve hot, optionally drizzled with more maple syrup.
Notes
Use fresh ingredients for the best flavor, and don’t overcrowd the pan when roasting.
