Ingredients
- 1 package of phyllo pastry, thawed
- 8 oz Brie cheese, cut into small pieces
- 1 cup fresh or canned cranberries
- 2 tbsp brown sugar or honey
- 1 tbsp balsamic vinegar
- 1 tbsp fresh herbs (thyme or rosemary), finely chopped
- 1/4 cup melted butter (for brushing)
Instructions
- Preheat your oven to 375°F (190°C). Lay out your phyllo pastry sheets and brush each one lightly with melted butter before layering them.
- Layer about 5 sheets stacked and brushed with butter, then cut them into squares. Shape each square into the muffin wells to create cup shapes.
- Combine the cranberries, brown sugar, balsamic vinegar, and herbs in a mixing bowl until coated.
- Place a small piece of Brie in each phyllo cup, then spoon the cranberry mixture on top. Add another piece of Brie if desired.
- Bake for 15-20 minutes or until golden brown. Watch closely to prevent burning.
- Cool slightly before serving warm for the best experience.
