Ingredients

  • 1 package of phyllo pastry, thawed
  • 8 oz Brie cheese, cut into small pieces
  • 1 cup fresh or canned cranberries
  • 2 tbsp brown sugar or honey
  • 1 tbsp balsamic vinegar
  • 1 tbsp fresh herbs (thyme or rosemary), finely chopped
  • 1/4 cup melted butter (for brushing)

Instructions

  1. Preheat your oven to 375°F (190°C). Lay out your phyllo pastry sheets and brush each one lightly with melted butter before layering them.
  2. Layer about 5 sheets stacked and brushed with butter, then cut them into squares. Shape each square into the muffin wells to create cup shapes.
  3. Combine the cranberries, brown sugar, balsamic vinegar, and herbs in a mixing bowl until coated.
  4. Place a small piece of Brie in each phyllo cup, then spoon the cranberry mixture on top. Add another piece of Brie if desired.
  5. Bake for 15-20 minutes or until golden brown. Watch closely to prevent burning.
