Ingredients
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1 tbsp ground ginger
- 1 tbsp cinnamon
- 1 tsp nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup unsulfured molasses
- 1 large egg
- 1 tsp vanilla extract
- 2 cups powdered sugar (for icing)
- 2-4 tbsp milk (for icing)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together flour, baking soda, and spices.
- In another bowl, beat the unsalted butter, granulated sugar, and brown sugar until fluffy.
- Add molasses, egg, and vanilla extract to the butter mixture and mix until smooth.
- Gradually add the dry ingredients to the wet mixture.
- Chill the dough for at least 30 minutes.
- Roll teaspoon-sized balls of dough and place them on a baking sheet.
- Bake for 8-10 minutes until edges are firm.
- Cool on the pan before transferring to a wire rack.
- Drizzle the icing made with powdered sugar and milk over the cookies.

Notes
For a dairy-free version, substitute butter with coconut oil and molasses with maple syrup. Experiment with spices for unique flavors.
