Ingredients

  • 1 cup ube (purple yam), steamed and mashed
  • 3-4 cups all-purpose flour (unbleached or whole wheat)
  • 1 cup coconut milk
  • 2 tablespoons sugar
  • 2 teaspoons active dry yeast
  • 1 teaspoon salt
  • ¼ cup vegetable oil or melted coconut oil
  • 1 cup warm water

Instructions

  1. Steam or boil the ube until soft, then mash and cool.
  2. In a bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until frothy.
  3. Mix mashed ube, coconut milk, and oil in a large bowl. Add yeast mixture and gradually add flour and salt until a soft dough forms.
  4. Knead dough for 8-10 minutes until smooth, adding flour as necessary.
  5. Let the dough rise in a greased bowl for about 1 hour until doubled in size.
  6. Punch down the dough, divide, and shape into rolls. Let sit for 30 minutes covered.
  7. Preheat oven to 350°F (175°C).
  8. Bake rolls for 20-25 minutes until golden brown. Optionally brush with coconut milk before baking.
  9. Cool on a wire rack and serve warm.
