Ingredients
- 1 cup ube (purple yam), steamed and mashed
- 3-4 cups all-purpose flour (unbleached or whole wheat)
- 1 cup coconut milk
- 2 tablespoons sugar
- 2 teaspoons active dry yeast
- 1 teaspoon salt
- ¼ cup vegetable oil or melted coconut oil
- 1 cup warm water
Instructions
- Steam or boil the ube until soft, then mash and cool.
- In a bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until frothy.
- Mix mashed ube, coconut milk, and oil in a large bowl. Add yeast mixture and gradually add flour and salt until a soft dough forms.
- Knead dough for 8-10 minutes until smooth, adding flour as necessary.
- Let the dough rise in a greased bowl for about 1 hour until doubled in size.
- Punch down the dough, divide, and shape into rolls. Let sit for 30 minutes covered.
- Preheat oven to 350°F (175°C).
- Bake rolls for 20-25 minutes until golden brown. Optionally brush with coconut milk before baking.
- Cool on a wire rack and serve warm.
