Ingredients

  • 1 cup ube (purple yam), fresh or frozen
  • 3 ½ cups all-purpose flour (or gluten-free flour blend)
  • 1 cup coconut milk (or almond/soy milk)
  • 2 ¼ teaspoons active dry yeast
  • ½ cup sugar (or coconut sugar)
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • ¼ cup olive oil or vegan butter

Instructions

  1. Prepare the ube: Steam or boil until fork-tender (about 20 minutes) and mash until smooth.
  2. Make the dough: Mix warm coconut milk with active dry yeast and a teaspoon of sugar; let bubble for 5-10 minutes.
  3. Combine ingredients: Mix flour, sugar, and salt in a large bowl; add yeast mixture, oil, and vanilla followed by mashed ube.
  4. Knead the dough: Mix until combined and knead for 5-7 minutes until smooth and elastic.
  5. Let it rise: Place in a greased bowl and cover, letting rise for about 1 hour or until doubled in size.
  6. Shape your rolls: Punch down the dough, turn out onto a floured surface, divide into portions, and shape into rolls.
  7. Second rise: Cover the rolls and let them rise for an additional 30 minutes.
  8. Bake: Preheat oven to 350°F (175°C) and bake for 20-25 minutes until golden brown.
  9. Cool and enjoy: Cool slightly before serving, optionally brushing with melted vegan butter.
