Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup sundried tomatoes, packed in oil or dry
  • 2 cups fresh spinach
  • 1 cup mozzarella or cream cheese
  • 3 cloves garlic, minced
  • 1 tablespoon fresh basil or oregano
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice each chicken breast open with a fillet knife to create a pocket for stuffing.
  3. In a skillet, heat olive oil over medium heat, add garlic, and sauté until fragrant.
  4. Add spinach and sauté until wilted, then mix in sundried tomatoes and herbs.
  5. Stir in cheese until combined, and season with salt and pepper.
  6. Stuff chicken breasts with the mixture and secure with toothpicks if needed, brushing outside with olive oil and seasoning.
  7. Place on a greased baking sheet and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
