Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup sundried tomatoes, packed in oil or dry
- 2 cups fresh spinach
- 1 cup mozzarella or cream cheese
- 3 cloves garlic, minced
- 1 tablespoon fresh basil or oregano
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice each chicken breast open with a fillet knife to create a pocket for stuffing.
- In a skillet, heat olive oil over medium heat, add garlic, and sauté until fragrant.
- Add spinach and sauté until wilted, then mix in sundried tomatoes and herbs.
- Stir in cheese until combined, and season with salt and pepper.
- Stuff chicken breasts with the mixture and secure with toothpicks if needed, brushing outside with olive oil and seasoning.
- Place on a greased baking sheet and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
- Let rest for 5 minutes before slicing and serving.
Notes
For added flavor, consider drizzling with balsamic glaze or squeezing fresh lemon juice before serving.
