Delightfully crispy samosas filled with spiced lamb, served with a sweet and tangy mango chutney.

Ingredients

  • Ground Lamb
  • 1 Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 inch Ginger, minced
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1 tsp Garam Masala
  • 1/2 tsp Red Chili Powder
  • Cilantro or Mint, to taste
  • Store-bought samosa or spring roll wrappers
  • Vegetable Oil, for frying
  • 2 Ripe Mangoes, diced
  • 1/4 cup Sugar
  • Spices for chutney: Ginger, Chili, Vinegar
  • Optional: Sultanas or Raisins

Instructions

  1. In a skillet, heat oil and sauté onions until translucent. Add garlic and ginger, cooking until fragrant.
  2. Stir in ground lamb and spices, cooking until browned. Season with herbs, salt, and pepper, then allow to cool.
  3. If making dough, mix flour and salt, add water, roll thin, and cut into circles. If using wrappers, ensure they are thawed.
  4. Assemble by placing filling on dough circle, folding over, and sealing the edges. Create pleats if desired.
  5. Heat oil in a deep pan and fry samosas in batches until golden brown and crispy. Drain on paper towels.
  6. For chutney, combine diced mango, sugar, vinegar, and spices in a saucepan. Simmer until thickened.
  7. Serve warm with mango chutney on the side.

Notes

Don’t overfill the samosas and ensure a good seal to prevent leaks during frying. Serve with a yogurt dip for added flavor.
