Ingredients

  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, full-fat
  • ¾ cup granulated sugar
  • ½ cup sour cream
  • 2 large eggs
  • 1 cup champagne (sparkling wine)
  • 2 cups fresh strawberries, sliced

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a medium bowl, combine crushed graham crackers and melted butter. Press mixture into the bottom of the baking dish. Bake for 10 minutes and let cool.
  3. In a large bowl, beat cream cheese until smooth. Gradually add sugar, mix until creamy. Blend in sour cream, then add eggs one at a time. Pour in champagne and mix until combined.
  4. Pour cheesecake mixture over cooled crust and smooth the top.
  5. Bake for 30-35 minutes or until center is set but slightly jiggly. Cool in the pan for 1 hour, then refrigerate for at least 4 hours.
  6. Slice into squares and top with fresh strawberries just before serving.
