Ingredients
- 1 ½ cups crushed graham crackers
- ½ cup unsalted butter, melted
- 8 oz cream cheese, full-fat
- ¾ cup granulated sugar
- ½ cup sour cream
- 2 large eggs
- 1 cup champagne (sparkling wine)
- 2 cups fresh strawberries, sliced
Instructions
- Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a medium bowl, combine crushed graham crackers and melted butter. Press mixture into the bottom of the baking dish. Bake for 10 minutes and let cool.
- In a large bowl, beat cream cheese until smooth. Gradually add sugar, mix until creamy. Blend in sour cream, then add eggs one at a time. Pour in champagne and mix until combined.
- Pour cheesecake mixture over cooled crust and smooth the top.
- Bake for 30-35 minutes or until center is set but slightly jiggly. Cool in the pan for 1 hour, then refrigerate for at least 4 hours.
- Slice into squares and top with fresh strawberries just before serving.
Notes
Ensure cream cheese is at room temperature for a smooth filling. Chill bars for the best flavor development.
