A delightful cake made with layers of fluffy blini, rich smoked salmon, and fresh dill, perfect for brunch or as an elegant appetizer.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup buckwheat flour
  • 2 teaspoons baking powder
  • A pinch of salt
  • 1 cup milk
  • 2 eggs
  • Butter, for greasing
  • 8 ounces cream cheese, softened
  • 1 tablespoon lemon juice
  • Fresh dill, chopped
  • Thinly sliced smoked salmon
  • Cracked black pepper (optional)
  • Capers or shallots (optional)

Instructions

  1. In a mixing bowl, combine all-purpose flour, buckwheat flour, baking powder, and salt. In another bowl, whisk together milk and eggs until frothy. Pour wet ingredients into dry and mix until smooth. Let the batter rest for 15 minutes.
  2. Heat a skillet over medium heat and grease it with butter. Pour small rounds of batter (about 2 tablespoons) into the skillet and cook until bubbles form. Flip and cook until golden brown. Keep warm.
  3. In a bowl, mix softened cream cheese with lemon juice and chopped dill. Spread on each blin.
  4. Layer smoked salmon on top of the cream cheese and garnish with more dill. Add cracked black pepper or capers if desired.
  5. Slice into wedges and serve.

Notes

Allow the batter to rest for fluffier blinis and ensure your skillet is at the right temperature before cooking.
