Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • a pinch of salt
  • 1 cup cottage cheese
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup honey or maple syrup

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin.
  2. In a large bowl, mix the rolled oats, flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk the cottage cheese, eggs, and milk until smooth. Stir in the honey or maple syrup.
  4. Combine the wet ingredients with the dry ingredients, stirring gently until just mixed.

  6. Scoop the batter into the muffin tin, filling each cup about 2/3 full.
