- 1 cup rolled oats
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- a pinch of salt
- 1 cup cottage cheese
- 2 eggs
- 1/2 cup milk
- 1/4 cup honey or maple syrup
Instructions
- Preheat the oven to 375°F (190°C) and prepare a muffin tin.
- In a large bowl, mix the rolled oats, flour, baking powder, baking soda, and salt.
- In another bowl, whisk the cottage cheese, eggs, and milk until smooth. Stir in the honey or maple syrup.
- Combine the wet ingredients with the dry ingredients, stirring gently until just mixed.
- If desired, fold in any extra nuts or fruits.
- Scoop the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, cool for a few minutes before transferring to a wire rack and enjoy warm.
