A comforting and flavorful slow cooker dish featuring tender beef, soy sauce, and fresh vegetables, perfect for weeknight dinners.

  • Total Time: 370 minutes
  • Yield: 4 servings

Ingredients

  • 1 lb beef (flank steak or sirloin), sliced into thin strips
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 4 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 1 tablespoon vegetable oil
  • 2 bell peppers, chopped
  • 3 green onions, sliced (for garnish)
  • 1 teaspoon sesame oil

Instructions

  1. Slice the beef into thin strips, about ¼ inch thick.
  2. In a skillet, heat vegetable oil over medium heat. Add minced garlic and ginger, sauté for 1-2 minutes until fragrant.
  3. In the slow cooker, combine sautéed garlic and ginger, sliced beef, soy sauce, brown sugar, and sesame oil. Add bell peppers and mix well.
  4. Close the lid and cook on low for 5-6 hours or high for 3-4 hours.
  5. Once cooked, adjust flavors if necessary and serve over steamed rice, garnished with green onions.

Notes

For optimal flavor, consider marinating the beef in soy sauce for a few hours before cooking, and ensure proper slicing against the grain.
