Ingredients

  • 4 medium-sized sweet potatoes
  • 1 lb lean ground turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 1 cup bell peppers, chopped (optional)
  • 1 cup spinach or kale, chopped (optional)
  • 1/2 cup cheese (feta or cheddar, optional)
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and poke holes in them with a fork.
  3. Place sweet potatoes on a lined baking sheet and bake for 45-50 minutes until soft.
  4. In a skillet, heat olive oil and sauté onions and garlic until translucent.
  5. Add the ground turkey, cook until browned, and season with cumin, paprika, salt, and pepper.
  6. If using, stir in the bell peppers or spinach during the last few minutes of cooking.
  7. Once the sweet potatoes are tender, slice them open lengthwise and fluff the inside.
  8. Spoon the turkey mixture into each potato and top with cheese if desired.
  9. Return to the oven for an additional 10 minutes to melt the cheese.
  10. Serve topped with fresh herbs and enjoy!

Notes
