Ingredients
- 4 medium-sized sweet potatoes
- 1 lb lean ground turkey
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and black pepper to taste
- 1 cup bell peppers, chopped (optional)
- 1 cup spinach or kale, chopped (optional)
- 1/2 cup cheese (feta or cheddar, optional)
- 2 tbsp olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes and poke holes in them with a fork.
- Place sweet potatoes on a lined baking sheet and bake for 45-50 minutes until soft.
- In a skillet, heat olive oil and sauté onions and garlic until translucent.
- Add the ground turkey, cook until browned, and season with cumin, paprika, salt, and pepper.
- If using, stir in the bell peppers or spinach during the last few minutes of cooking.
- Once the sweet potatoes are tender, slice them open lengthwise and fluff the inside.
- Spoon the turkey mixture into each potato and top with cheese if desired.
- Return to the oven for an additional 10 minutes to melt the cheese.
- Serve topped with fresh herbs and enjoy!
Notes
Feel free to substitute ground turkey with chicken or plant-based meat for a vegetarian option.
