Ingredients
- 4 medium sweet potatoes
- 1 lb lean ground turkey
- 3 cloves fresh garlic, minced
- 1 medium yellow onion, chopped
- 1/4 cup fresh parsley, chopped
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and poke holes in the sweet potatoes, then place them on a baking sheet. Bake for 45-60 minutes, or until fork-tender.
- Heat a large skillet over medium heat and add a drizzle of olive oil.
- Sauté the chopped onions until softened, then add minced garlic, cooking until fragrant.
- Add the ground turkey and spices to the skillet, breaking up the meat as it browns. Cook until no longer pink.
- Remove from heat and mix in fresh herbs.
- Once the sweet potatoes are ready, slice them open and fluff the insides.
- Spoon the turkey mixture into each sweet potato, packing it in to your liking.
- Optionally, return the stuffed potatoes to the oven for an additional 10 minutes for a golden top.
Notes
Ensure sweet potatoes are tender for easy scooping. Fresh herbs enhance the flavor.
