Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (sharp cheddar, mozzarella, or feta)
  • ½ cup chopped olives (kalamata or green)
  • 1 tablespoon fresh herbs (rosemary or thyme)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, beat the eggs and stir in the milk and any melted butter if using.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined.
  5. Fold in the cheese and olives along with the chosen herbs.
  6. Transfer the mixture into the greased loaf pan and smooth the top.
  7. Bake for 40-45 minutes until golden brown and a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for about 10 minutes before transferring to a wire rack. Slice and enjoy.
