Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 large eggs
- 1 cup milk
- 1 cup shredded cheese (sharp cheddar, mozzarella, or feta)
- ½ cup chopped olives (kalamata or green)
- 1 tablespoon fresh herbs (rosemary or thyme)
Instructions
- Preheat your oven to 350°F (175°C) and grease your loaf pan.
- In a large bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, beat the eggs and stir in the milk and any melted butter if using.
- Gradually add the wet mixture to the dry ingredients, stirring until just combined.
- Fold in the cheese and olives along with the chosen herbs.
- Transfer the mixture into the greased loaf pan and smooth the top.
- Bake for 40-45 minutes until golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for about 10 minutes before transferring to a wire rack. Slice and enjoy.
Notes
For an added flavor boost, sprinkle some cheese and herbs on top before baking.
