Ingredients
- 1 medium butternut squash, cubed
- 1 pound ground turkey
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 onion, chopped
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the butternut squash in half lengthwise and scoop out the seeds. Peel and cube the squash into bite-sized pieces.
- In a large bowl, combine cubed squash, ground turkey, minced garlic, chopped onions, and olive oil. Sprinkle in thyme, rosemary, salt, and pepper. Toss to coat.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Roast for 25-30 minutes, stirring halfway through.
- Serve warm, garnished with fresh herbs.
Notes
For variations, you can substitute acorn or delicata squash, or use ground chicken or plant-based alternatives.
