Ingredients

  • 1 medium butternut squash, cubed
  • 1 pound ground turkey
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash in half lengthwise and scoop out the seeds. Peel and cube the squash into bite-sized pieces.
  3. In a large bowl, combine cubed squash, ground turkey, minced garlic, chopped onions, and olive oil. Sprinkle in thyme, rosemary, salt, and pepper. Toss to coat.
  4. Spread the mixture evenly on a baking sheet lined with parchment paper.
  5. Roast for 25-30 minutes, stirring halfway through.
  6. Serve warm, garnished with fresh herbs.
