Ingredients

  • 1 Butterball Turkey Breast (3 to 7 pounds)
  • Olive Oil or Butter
  • 4 cloves fresh garlic, minced
  • 2 tablespoons fresh herbs (rosemary, thyme, sage)
  • Salt and Pepper, to taste
  • 1 lemon, juiced

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Remove packaging and giblets, and pat the turkey breast dry with paper towels.
  3. In a bowl, combine minced garlic, chopped herbs, olive oil, salt, and pepper; rub all over turkey.
  4. Squeeze lemon juice over the turkey and place lemon slices inside the cavity.
  5. Place turkey on a roasting rack in a pan and roast for 1.5 to 2 hours, checking frequently.
  6. Baste the turkey with its own juices every 30 minutes.
  7. Check doneness with a meat thermometer (should read 165°F/74°C).
  8. Allow to rest for 15-20 minutes before carving.
