Ingredients
- Mixed salad greens (arugula, spinach, or spring mix)
- 2 ripe pears (Bosc or Anjou)
- 100g blue cheese (crumbled)
- 1 shallot (minced)
- 3 tablespoons extra virgin olive oil

Instructions
- Wash and dry the mixed greens. Slice the pears thinly and crumble the blue cheese.
- Whisk olive oil, apple cider vinegar, shallot, honey, salt, and pepper in a bowl. Let sit for 10 minutes.
- In a large bowl, combine the greens, sliced pears, and crumbled blue cheese. Drizzle with the dressing and toss gently.
- Serve immediately, garnished with fresh herbs if desired.
