Ingredients
- 1 Pork Tenderloin
- 2 tablespoons Olive Oil
- 4 cloves Garlic (fresh, minced)
- 8 ounces Mushrooms (cremini or button, sliced)
- 3 tablespoons Butter
- 1/2 cup White Wine (dry)
- 2 tablespoons Fresh Thyme (chopped)
- 2 tablespoons Fresh Rosemary (chopped)
- 1/2 cup Chicken or Vegetable Broth
- Salt and Pepper (to taste)
Instructions
- Prepare the Pork: Trim excess fat from the pork tenderloin. Pat it dry and season with salt and pepper.
- Sear the Tenderloin: Heat olive oil in a large skillet over medium-high heat. Sear the tenderloin on all sides until golden brown (3-4 minutes per side). Remove from skillet.
- Sauté the Aromatics: In the same skillet, lower the heat and add more olive oil if needed. Add minced garlic and chopped mushrooms, sauté until fragrant and mushrooms soften (3-5 minutes).
- Deglaze the Pan: Pour in white wine, scraping the bottom to release browned bits. Let the wine reduce for a few minutes.
- Create the Sauce: Add butter, chicken broth, and fresh herbs; stir to combine. Return the tenderloin, spooning sauce over it.
- Bake to Perfection: Preheat oven to 400°F (200°C). Roast the skillet in the oven for 20-25 minutes or until the internal temperature reaches 145°F (63°C). Let it rest before slicing.
- Serve and Enjoy: Slice the pork and drizzle with the mushroom-garlic sauce before serving.
Notes
Pair with buttery mashed potatoes, steamed green beans, or a fresh garden salad. For wine, consider a light-bodied Pinot Blanc or medium-bodied Chianti.
