Instructions

  1. Prepare the Pork: Trim excess fat from the pork tenderloin. Pat it dry and season with salt and pepper.
  2. Sear the Tenderloin: Heat olive oil in a large skillet over medium-high heat. Sear the tenderloin on all sides until golden brown (3-4 minutes per side). Remove from skillet.
  3. Sauté the Aromatics: In the same skillet, lower the heat and add more olive oil if needed. Add minced garlic and chopped mushrooms, sauté until fragrant and mushrooms soften (3-5 minutes).
  4. Deglaze the Pan: Pour in white wine, scraping the bottom to release browned bits. Let the wine reduce for a few minutes.
  5. Create the Sauce: Add butter, chicken broth, and fresh herbs; stir to combine. Return the tenderloin, spooning sauce over it.
  6. Bake to Perfection: Preheat oven to 400°F (200°C). Roast the skillet in the oven for 20-25 minutes or until the internal temperature reaches 145°F (63°C). Let it rest before slicing.
