Ingredients

  • 4 salmon fillets
  • 1 lemon (zest and juice)
  • 2 tablespoons freshly cracked black pepper
  • 1/4 cup capers
  • 2 tablespoons olive oil
  • Fresh parsley or dill, for garnish
  • Salt, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the salmon fillets in a baking dish lined with parchment paper. Drizzle with olive oil and season with salt, cracked black pepper, and lemon zest.
  3. Drain, rinse, and pat dry the capers. Sauté them in a small skillet over medium heat with a dash of olive oil for 3-4 minutes until crispy.
  4. Roast the salmon in the oven for 12-15 minutes until it flakes easily with a fork.
  5. Once cooked, squeeze fresh lemon juice over the fillets and top with crispy capers before serving.
  6. Plate and enjoy with roasted vegetables or a fresh salad.

Notes

If missing salmon, substitute with trout or sea bass. Don’t skip the crispy capers for added texture.
