Ingredients
- 4 salmon fillets
- 1 lemon (zest and juice)
- 2 tablespoons freshly cracked black pepper
- 1/4 cup capers
- 2 tablespoons olive oil
- Fresh parsley or dill, for garnish
- Salt, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Place the salmon fillets in a baking dish lined with parchment paper. Drizzle with olive oil and season with salt, cracked black pepper, and lemon zest.
- Drain, rinse, and pat dry the capers. Sauté them in a small skillet over medium heat with a dash of olive oil for 3-4 minutes until crispy.
- Roast the salmon in the oven for 12-15 minutes until it flakes easily with a fork.
- Once cooked, squeeze fresh lemon juice over the fillets and top with crispy capers before serving.
- Plate and enjoy with roasted vegetables or a fresh salad.
Notes
If missing salmon, substitute with trout or sea bass. Don’t skip the crispy capers for added texture.
