Ingredients

  • Udon noodles
  • Kimchi
  • Unsalted butter
  • Soft-boiled eggs
  • Fresh garlic
  • Green onions
  • Soy sauce
  • Sesame oil

Instructions

  1. Cook the udon noodles in a pot of salted boiling water according to package instructions, drain and set aside.
  2. Prepare the soft-boiled eggs by simmering them in gently boiling water for 6-7 minutes, then transfer to ice water, peel and set aside.
  3. In a large skillet, heat a tablespoon of butter over medium heat and sauté minced garlic and sliced green onions until fragrant.
  4. Add kimchi to the skillet and sauté for another 2-3 minutes until heated through.
  5. Combine the cooked udon noodles with the kimchi mixture, drizzling in soy sauce and sesame oil to taste.
  6. Add remaining butter and stir until noodles are well coated.
  7. Divide the noodles into bowls, top with soft-boiled eggs, and add optional toppings before serving.

Notes

Customize the dish by substituting noodles or adjusting kimchi based on spice preference. Keep an eye on noodle cooking time to avoid overcooking.
