Ingredients
- 1 lb skirt steak
- 2 tbsp olive oil
- Juice of 1 lemon
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 cup couscous
- 1 1/4 cups chicken or vegetable broth
Instructions
- In a mixing bowl, combine olive oil, lemon juice, minced garlic, and chopped herbs. Add skirt steak, ensuring it’s well coated. Marinate for at least 30 minutes.
- Prepare couscous according to package directions, using broth instead of water. Fluff with a fork and stir in additional garlic, lemon juice, and herbs.
- Preheat grill to medium-high heat.
- Grill the skirt steak for 4-5 minutes per side for medium-rare, adjusting time for desired doneness.
- Allow the steak to rest for 5-7 minutes, then slice against the grain.
- Serve the steak alongside the lemon herb couscous, garnished with more herbs and lemon juice.
Notes
Flank steak can be used as an alternative to skirt steak. Ensure to allow steak to come to room temperature before grilling for even cooking.
