Ingredients

  • 1 lb skirt steak
  • 2 lemons (juice and zest)
  • 4 cloves garlic (minced)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 1 cup couscous
  • 2 cups water
  • Additional herbs (cilantro, mint) for garnish
  • Red pepper flakes (optional)

Instructions

  1. In a bowl, whisk together lemon juice, zest, minced garlic, olive oil, parsley, salt, and pepper. Marinate the skirt steak for at least 30 minutes.
  2. In a saucepan, bring water to a boil, add couscous, salt, and olive oil. Cover and let steam for 5 minutes, then fluff with a fork and add chopped herbs and additional lemon juice.
  3. Preheat the grill to high, remove steak from marinade, and grill for 4-5 minutes per side for medium-rare. Let rest for 5-10 minutes.
  4. Slice the steak against the grain and serve over the couscous, garnished with additional herbs and lemon wedges.

Notes

For added flavor, let the steak marinate overnight. Serve with grilled seasonal vegetables for a complete meal.
