Ingredients
- 2 boneless Chicken Breasts or Thighs
- 1 cup Greek Yogurt
- 1 finely diced Cucumber
- 1-2 cloves Garlic, minced
- Juice and zest of 1/2 Lemon
- 2 tablespoons Fresh Dill, chopped
- 2 tablespoons Olive Oil
- Salt, to taste
- Paprika, for seasoning
Instructions
- Cook the chicken by grilling, baking, or pan-frying until cooked through. Season with salt, pepper, and paprika beforehand for best results.
- While the chicken cooks, prepare the tzatziki by mixing Greek yogurt, diced cucumber, minced garlic, lemon juice and zest, fresh dill, and salt in a bowl. Stir well and refrigerate.
- Once cooked, let the chicken cool slightly before chopping it into bite-sized pieces.
- In a large bowl, combine cooled chicken, tzatziki sauce, and any additional chopped veggies if desired. Toss until well coated.
- Serve immediately or chill in the fridge for an hour to let flavors meld. Serve on a bed of greens or with pita bread.
Notes
Consider marinating the chicken for added flavor. Drain the cucumber well to avoid runny tzatziki.
