Ingredients

  • 2 boneless Chicken Breasts or Thighs
  • 1 cup Greek Yogurt
  • 1 finely diced Cucumber
  • 1-2 cloves Garlic, minced
  • Juice and zest of 1/2 Lemon
  • 2 tablespoons Fresh Dill, chopped
  • 2 tablespoons Olive Oil
  • Salt, to taste
  • Paprika, for seasoning

Instructions

  1. Cook the chicken by grilling, baking, or pan-frying until cooked through. Season with salt, pepper, and paprika beforehand for best results.
  2. While the chicken cooks, prepare the tzatziki by mixing Greek yogurt, diced cucumber, minced garlic, lemon juice and zest, fresh dill, and salt in a bowl. Stir well and refrigerate.
  3. Once cooked, let the chicken cool slightly before chopping it into bite-sized pieces.
  4. In a large bowl, combine cooled chicken, tzatziki sauce, and any additional chopped veggies if desired. Toss until well coated.
  5. Serve immediately or chill in the fridge for an hour to let flavors meld. Serve on a bed of greens or with pita bread.

Notes

Consider marinating the chicken for added flavor. Drain the cucumber well to avoid runny tzatziki.
