Ingredients
- 4 cups fresh corn kernels (or frozen corn)
- 1/2 cup honey
- 1/4 cup unsalted butter, melted
- 1/2 cup sour cream
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 350°F (175°C).
- If using fresh corn, husk the ears and remove the kernels from the cob. If using frozen corn, thaw it thoroughly beforehand.
- In a large mixing bowl, combine the honey, melted butter, and sour cream. Stir until well blended.
- Beat in the eggs until fully incorporated.
- Gently fold in the corn along with salt and pepper.
- Grease a casserole dish lightly with butter and pour in the corn mixture, spreading evenly.
- Bake for 45-50 minutes, or until golden brown and set in the middle. Optionally, broil for the last few minutes for a crispy top.
- Let it rest for a few minutes before serving.
Notes
Adjust the sweetness of the casserole by varying the amount of honey or add fresh herbs for extra flavor.
