Ingredients
- 1 pound fresh green beans, trimmed
- 1 cup crumbled feta cheese
- 1 cup dried cranberries
- 1 cup chopped walnuts
- 1/4 cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Rinse the green beans and trim their ends. Boil salted water, then blanch the green beans for 3-4 minutes. Transfer to an ice bath.
- In a large bowl, combine blanched green beans, feta, cranberries, and walnuts.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to coat.
- Taste and adjust the seasoning if needed before serving. Chill for about 30 minutes for best flavor.
Notes
For variation, you can use goat cheese instead of feta or add chopped bell peppers or cherry tomatoes.
