Ingredients
- 1 lb ground meat (beef, Italian sausage, or ground turkey)
- 1 can (14 oz) diced tomatoes
- 2 tbsp tomato paste
- 4 cups chicken or vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 8 oz lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add chopped onions and minced garlic, sautéing until translucent.
- Add the ground meat and cook until browned, breaking up lumps with a wooden spoon.
- Stir in diced tomatoes and tomato paste, season with salt and pepper, and allow to simmer.
- Pour in the broth and bring to a gentle boil, adding any additional vegetables at this point.
- Incorporate the broken lasagna noodles and adjust cooking time according to package instructions.
- Once the pasta is nearly done, lower the heat and stir in ricotta and mozzarella until melted.
- Stir in fresh basil and oregano just before serving.
Notes
Can substitute ground meat with lentils for a vegetarian option. Best served hot with crusty bread.
