Ingredients

  • 1 lb ground meat (beef, Italian sausage, or ground turkey)
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 4 cups chicken or vegetable broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add chopped onions and minced garlic, sautéing until translucent.
  2. Add the ground meat and cook until browned, breaking up lumps with a wooden spoon.
  3. Stir in diced tomatoes and tomato paste, season with salt and pepper, and allow to simmer.
  4. Pour in the broth and bring to a gentle boil, adding any additional vegetables at this point.
  5. Incorporate the broken lasagna noodles and adjust cooking time according to package instructions.
  6. Once the pasta is nearly done, lower the heat and stir in ricotta and mozzarella until melted.
  7. Stir in fresh basil and oregano just before serving.

Notes

Can substitute ground meat with lentils for a vegetarian option. Best served hot with crusty bread.
