Ingredients
- 4 cups fresh corn (or canned/frozen)
- 1/2 cup honey
- 1/4 cup butter, melted
- 1 cup cream or sour cream (or Greek yogurt)
- 2 large eggs
- Salt and pepper to taste
- 1 tsp thyme or rosemary (fresh or dried)
Instructions
- Preheat your oven to 350°F (175°C).
- If using fresh corn, cut the kernels off the cob. If using canned or frozen, ensure they are well-drained.
- In a large mixing bowl, combine the corn, honey, melted butter, cream, eggs, and spices. Stir until well-combined.
- Grease a 9×13 inch baking dish and pour the mixture into the dish, evening the top with a spatula.
- Bake for 45 minutes or until the top is golden brown and the center is set.
- Allow to cool for a few minutes before serving.
Notes
Feel free to add breadcrumbs or crushed crackers on top halfway through baking for added texture.
