Ingredients
- 1 package gingerbread mix
- 3 large eggs
- 1 cup granulated sugar (or brown sugar)
- 1/2 cup unsalted butter, softened
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 cup powdered sugar (for frosting)
- 1/2 cup cream cheese, softened
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease your baking pan generously.
- In a large bowl, whisk together the gingerbread mix, baking powder, baking soda, and spices.
- In another bowl, beat together the eggs and sugar until fluffy, then mix in the softened butter.
- Gradually add the dry ingredients to the wet, stirring gently until combined.
- Spread the batter evenly into the prepared pan and bake for about 20-25 minutes or until a toothpick comes out clean.
- Let the cake cool in the pan for a few minutes before transferring it to a wire rack.
- Blend the cream cheese, powdered sugar, and vanilla extract until creamy for the frosting.
- While slightly warm, carefully roll the cake in parchment paper to cool completely.
- Unroll the cake, spread with frosting, then roll back up. Frost the outside and decorate as desired.
Notes
For a unique twist, try adding cocoa powder on top or serve with whipped cream or seasonal fruit.
