- 1 cup unsalted butter
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1 cup toffee bits
- 1 tsp vanilla extract
- 1/2 tsp sea salt (plus extra for sprinkling)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, beat together butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
- Add the eggs one at a time and mix in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and sea salt. Gradually add this mixture to the butter and sugar mixture, stirring gently to combine.
- Fold in the toffee bits.
- Drop cookie dough balls onto baking sheets, leaving space for spreading. Bake for 10-12 minutes until edges are golden and centers are still soft.
- Sprinkle with sea salt while warm and let cool on the tray for 5 minutes before transferring to a wire rack.
Notes
