Instructions
- Preheat your oven to 425°F (220°C).
- Peel and cube sweet potatoes into even pieces, about 1-inch cubes.

- Line a baking sheet with parchment paper and spread the sweet potato cubes in a single layer.
- Roast in the oven for 25-30 minutes, tossing halfway through for even cooking.
