Instructions
- Prepare the chicken by gently pounding the cutlets to an even thickness.
- Create a breading station: set up three shallow bowls with flour, beaten eggs, and breadcrumbs mixed with garlic and herbs.
- Bread the chicken by dredging it in flour, then dipping in eggs, and rolling in the breadcrumb mixture.
- Heat oil in a skillet over medium heat.
- Cook the breaded chicken until golden brown, about 4-5 minutes per side.
- Remove chicken and sauté sliced mushrooms in the same skillet until tender and golden.
- Assemble the bowl with sautéed mushrooms and crispy chicken cutlet, garnished with fresh herbs.
Notes
Allow the cutlets to rest on paper towels after cooking to absorb excess oil. Serve over rice or quinoa for a complete meal.
