Ingredients
- 2 fresh cod fillets
- 1 cup panko bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Olive oil spray
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Pat the cod fillets dry with paper towels and season with salt and pepper.
- In a medium bowl, combine panko bread crumbs, grated Parmesan, garlic powder, paprika, and dried oregano. Mix well.
- Dip the cod fillets in olive oil spray, then press into the panko mixture until evenly coated on both sides.
- Preheat the air fryer to 400°F (200°C).
- Place the coated fish in a single layer in the air fryer basket and air fry for 10-12 minutes, flipping halfway through, until golden brown and cooked through.
- Serve immediately with lemon wedges and your favorite dipping sauce.
Notes
For extra crunch, consider double-coating the fish; also feel free to experiment with different herbs and spices.
