Ingredients

  • Spaghetti, linguine, or penne
  • 1 cup Greek yogurt
  • 4 cloves fresh garlic, minced
  • 8 oz button or cremini mushrooms, sliced
  • 2 tbsp olive oil

  • Salt and pepper, to taste

Instructions

  1. Cook pasta in salted boiling water until al dente; drain.
  2. Sauté minced garlic and sliced mushrooms in olive oil until tender (5-7 minutes).
  3. Combine cooked pasta, sautéed garlic, and mushrooms in the pot.
  4. Mix in Greek yogurt and adjust consistency with reserved pasta water.
  5. Season with salt, pepper, and fresh herbs; serve immediately.

Notes

For a vegan alternative, use a dairy-free yogurt. Add grilled chicken or shrimp for protein. Store leftovers in the fridge for up to 3 days.
