Ingredients
- Spaghetti, linguine, or penne
- 1 cup Greek yogurt
- 4 cloves fresh garlic, minced
- 8 oz button or cremini mushrooms, sliced
- 2 tbsp olive oil
- Fresh parsley or basil, chopped
- Salt and pepper, to taste
Instructions
- Cook pasta in salted boiling water until al dente; drain.
- Sauté minced garlic and sliced mushrooms in olive oil until tender (5-7 minutes).
- Combine cooked pasta, sautéed garlic, and mushrooms in the pot.
- Mix in Greek yogurt and adjust consistency with reserved pasta water.
- Season with salt, pepper, and fresh herbs; serve immediately.
Notes
For a vegan alternative, use a dairy-free yogurt. Add grilled chicken or shrimp for protein. Store leftovers in the fridge for up to 3 days.
