Ingredients
- ½ cup crumbled blue cheese
- ½ cup mayonnaise
- ¼ cup red wine or balsamic vinegar
- 1 tablespoon Dijon mustard
- 1-2 cloves minced garlic
- ½ cup extra virgin olive oil
- Salt and pepper to taste
- Fresh herbs (parsley or chives) for garnish
Instructions
- In a bowl, mix together the blue cheese and mayonnaise until somewhat smooth.
- Add the vinegar and Dijon mustard, and mix to create a tangy balance.
- Stir in the minced garlic.
- Slowly whisk in the olive oil until well combined.
- Season with salt and pepper to taste.
- Taste and adjust flavors as needed.
- Refrigerate for at least 30 minutes to meld flavors.
- Serve over salads or roasted vegetables.
Notes
For a lighter version, substitute Greek yogurt for part of the mayonnaise. Store leftovers in an airtight container in the refrigerator for up to a week.
