A creamy and tangy dip made with whipped feta and fresh cranberries, perfect for festive gatherings.

Ingredients

  • 8 oz feta cheese
  • 4 oz cream cheese
  • 1 cup fresh or dried cranberries
  • 2 tbsp honey
  • 1 tbsp fresh thyme or rosemary
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. If using fresh cranberries, rinse and simmer with a splash of water and honey for 5-7 minutes until they burst. If using dried cranberries, chop them roughly.
  2. In a mixing bowl, combine feta and cream cheese, whipping until creamy.
  3. Gradually add olive oil, honey, and herbs, continuing to whip until smooth. Season with salt and pepper.
  4. Fold in cranberries, reserving some for garnish.
  5. Cover and chill in the fridge for at least 30 minutes.
  6. Serve on a platter, garnishing with reserved cranberries and a drizzle of honey and olive oil.

Notes

Ensure cheeses are at room temperature for easier mixing. Avoid over-mixing after adding cranberries to keep their texture.
