Ingredients
- 8 oz feta cheese
- 4 oz cream cheese
- 1 cup fresh or dried cranberries
- 2 tbsp honey
- 1 tbsp fresh thyme or rosemary
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- If using fresh cranberries, rinse and simmer with a splash of water and honey for 5-7 minutes until they burst. If using dried cranberries, chop them roughly.
- In a mixing bowl, combine feta and cream cheese, whipping until creamy.
- Gradually add olive oil, honey, and herbs, continuing to whip until smooth. Season with salt and pepper.
- Fold in cranberries, reserving some for garnish.
- Cover and chill in the fridge for at least 30 minutes.
- Serve on a platter, garnishing with reserved cranberries and a drizzle of honey and olive oil.
Notes
Ensure cheeses are at room temperature for easier mixing. Avoid over-mixing after adding cranberries to keep their texture.
